GREEN CHILE

*This makes a large double batch.

2 Onions chopped
4 small or 2 lg. Tomatillos
10 garlic cloves
5-6 lbs. Pork roast cut into bite size pcs.
½ cup chopped cilantro
3 tbsp. Salt
2 tbsp. Pepper
3 cans chicken broth
2 cans rotel
1 gal. Bag Big Jim Chiles
1 qt. Bag Pueblo Chiles (May be too hot for some)
6 cups water
12 Tbl. Flour
3 Tbl. Cumin
2 Tbl. Chili powder
3.5 cups milk
3 Tbl. EVOO or Peanut Oil

Brown pork w/ EVOO in lg. Pot w/ seasonings, then coat w/ flour, add veggies (except cilantro)… brown more.

Puree ½ of chiles w/ rotel and water in blender, add to pot. Chop other ½ of chiles, add to pot.

Add chicken broth, milk.

Puree cilantro w/ water, add to pot.

Simmer for 1-2 hrs., enjoy.
